Jamaican Jerk Fish with Broccolini & Sauteed Spinach and Mushrooms

Things You Will Need:

4 Talipia
Jamaican Jerk Seasoning (season to taste, I use McCormick if you can't find that use what ever you find)
1 Bunch Brocclini
3 cups Chopped Baby Bella Mushrooms (if you don't like Bella mushrooms you can use white mushrooms)
4 cups Baby Spinach (or regular it's totally up to you)
10 Garlic Cloves (I use organic and peeled but you can use minced or crushed)
Olive Oil
(Serves 2 - 4ppl)

Rinse and pat dry the fish
Preheat oven at 350

Jamaican Jerk Seasoning: Sprinkle on both sides of the fish

I used foil on the baking sheet (I love an easy clean up)..  Cook on 350 for 30-45 min

Broccolini Bunch, Baby Bella Mushrooms & Baby Spinach

Rinse and trim the broccolini

Cut broccolini into pieces (with the thicker stalks cut them in half)

Cut the mushrooms in half

Grab a hand full of spinach and chop (it doesn't have to be a fine chop)

Peeled Garlic Cloves I used the entire little bag

Instead of chopping the garlic I use a sandwich bag and a rolling pin to crush the garlic (I hate getting the smell on my hands)

In 2 separate pans add Olive Oil with the garlic (you can add as much as you like, I love garlic so I tend to go a little overboard)
Add chopped broccolini to the olive oil and garlic then cook until tender

Add mushrooms to the olive oil and garlic then cook until tender

Add spinach to mushroom and garlic mixture

Cooked Fish
